Baked Ziti with Spinach and Tomatoes

- 1 lb sausage: 1 lb minced pork or beef, 1 tsp salt, 1 tsp pepper, 2 tsp dried sage, ½ tsp red pepper, ½ tsp marjoram, ½ tsp summer savory, ¼ tsp coriander. Mix together and fry but don’t break into small pieces. Allow the sausage to be in clumps.
- 1 medium onion chopped
- 3 large garlic cloves (¾ ;tsp garlic powder)
- 3 ½ cups chopped tomatoes (28 oz)
- ½ c chopped fresh basil or ¼ cup dried basil
- ½ cup parmesan cheese
- 2 TBS olive oil
- 10 oz Ziti or spiral pasta
- 2 ½ cups cooked spinach from the market
- 6 oz shredded mozzarella cheese
- 2/3 cup parmesan cheese
Cook pasta according to package directions; drain, rinse and set aside. Heat large sauce pan over medium high heat; add sausage, onion, and garlic, cooking for about 10 minutes. Add tomatoes with liquid and basil; simmer 10 more minutes until sauce thickens slightly and tomatoes are cooked.
Stir in ½ cup parmesan cheese and 2 TBS olive oil, pasta, spinach and mozzarella. Transfer mixture to lightly oiled 9x13x2 pan. Sprinkle with 2/3 cup parmesan cheese. Bake for about 30 minutes in preheated 375 degree oven until sauce bubbles and cheese melts.
