Best if made early in the day and warmed up at supper
Ingredients:
- ½ lb pork stew
- 1 TBS oil
- 1 large onion chopped
- ¼ tsp cayenne pepper
- 1 tsp ginger
- 1 tsp turmeric
- 1 tsp coriander
- ½ tsp garlic powder
- ½ tsp cloves
- 1 tsp cinnamon
- 1 large chicken bullion
- 2 cups water
- 6 cups cubed potatoes
- 3 TBS curry powder
- salt to taste
- 4 chopped tomatoes
Brown pork in 1 TBS oil. Add onion and cook until soft. Add spices and cook while stirring for 2 minutes. Simmer 1 hour or until meat is soft. Add water, potatoes, salt and curry powder. Cook 10 to 15 minutes. Add more water if necessary. Add tomatoes and cook 10 more minutes
